Complete model and coupling function coverage for model IR

For the purposes of template backends we require the simulator instance to have everything required for code generation and execution present as attributes. Up till now, most everything was there, except symbolic expressions for the model dfuns and coupling functions.

All coupling functions should be easy to cover, and the majority of models as well, as long as they are expressible as arithmetic expressions. Those that are not, can be addressed in a further task.
